jackfruit arils stuffed with macadamia cream
The nutty flavour of macadamias goes well with the sweetness of jackfruit. Serve one per person as a petit four, or two to three per person for a more generous dessert.
12 jackfruit arils, crispy or firm variety
1 cup roasted unsalted macadamia nuts
125 g cream cheese
½ cup cream
¼ cup caster sugar
1 teaspoon vanilla essence
Blend the macadamia nuts, cream cheese, cream, caster sugar and vanilla essence in a food processor until smooth.
Cut a slit lengthways down the flattest side of each aril and stuff with the macadamia mixture. Arrange on a serving dish and place in fridge to firm up for at least an hour prior to serving.
